Cooking Steps
STEP 1/4
You know that you have to get rid of cockles first, right? Dip in salt water, cover with black plastic, and let it desiccate for half a day.
Then, wash thoroughly and blanch in boiling water.
STEP 2/4
Drain the blanched cockles and remove only one side of the skin when cooled and place in a bowl.
STEP 3/4
Mix all the seasoning ingredients to make soy sauce.
STEP 4/4
Put the sauce on top of the peeled cockles and it's done.
Don't boil cockles for a long time because you need to blanch them slightly to feel the texture.
